Wells Ward Trunk-or-Treat

Mike and I went to our first Trunk-or-Treat and had a lot of fun. I even talked Mike in to dressing up. He agreed to only if he could be something scary. But it was fun to see all the people that came and the decorated trunks and costumes.

Scary huh? Yeah I did the make up!!!!

Kenai is feeling better!!!

Well Kenai is jumping again!!! Mike and I think that maybe she is getting arthritis in her back hips and the cold weather was affecting her. She still has some issues with jumping, but at least she is able to now.

Witches Night In??

Witches Night Out didn't happen this year....everyone was out of town or had other plans. One of the things that I really wanted to see this year was my hairdresser was rapping a song tonight. Oh well, I'll just have to make her do it for me when I get my hair done next.
The other thing that I love about this night is getting dressed up, doing crazy make-up and hangin' out with the girls!!! But Halloween season ain't over yet right?!!
Next year for sure!!! (Hopefully)

Pizza (Chicken, Alfredo, Artichokes

These recipes work for me because all the ingredients I get, I keep in storage, and they are easy to store, so everything is easily available.

Also, they probably aren't the healthiest, but you can always add your fruits and veggies as side dishes or in this case-on the pizza.

This pizza is really easy because everything is already pre-made or you just add water!!

Canned Chicken
Ragu alfredo sauce
Canned artichoke hearts
mozzerella cheese
dried garlic/oregano
Pizza dough (I get Jiffy pizza dough because all it calls for is to add water)

Preheat oven according to the instructions on the pizza dough box. Make the dough and while it is rising, get your ingredients ready. Roll out the dough on a pizza pan or cookie sheet then I think it has you bake for 2-3 min. After that just spread the alfredo sauce, top with chicken, artichoke hearts then sprinkle on the cheese. After that I top it with the garlic and oregano. The more the better. Then bake the pizza according to the instructions on the box.
Altogether this probably takes about 1/2 hour from preparation to serving.

Beef Enchiladas

Here is a great easy recipe for ground beef enchiladas:
1-2 lbs of ground beef (depending on how many you are serving...for Mike and I, its just 1 lb.)
1 can of enchilada sauce ( you can use green or red, green is milder)
sour cream
shredded cheese
flour tortillas (6-10, depending on size of tortilla and how much meat you want in each)
dried or fresh chopped onion (optional)

Preheat oven to 350 degrees, cook the beef and onions until beef is browned, drain. Then add 1/2 can of the enchilada sauce. Add some sour cream to taste, it usually takes about 2 tbls. Spoon about 2 tbls of the meat into a tortilla, add shredded cheese and and roll/fold the tortilla. I usually place the tortillas in a casserole dish. Once you have all the finished with filling the tortillas, cover the enchiladas with the rest of the sauce and cover with more shredded cheese. Place in oven and bake 10-15 min. Serve.
You can always add your own little touches. Sometimes I had a little bit of cilantro and sometimes I add some green and red peppers to add some kick and color.

Spaghetti Casserole

My sis-in-law wanted me to post some of my recipes (since they taste good and are easy) So I am mostly doing this for her (Lindsey!!!) So every now-and-then I'll post some new stuff. I got this first one from Sherilyn:

Spaghetti Casserole:
1 bag of spaghetti ( I like angel hair) pasta
1 lb of regular sausage
1 jar of spaghetti sauce (or you can make your own....I can post that later)
1 bag of shredded cheese (colby jack/monterey cheddar is the best)

Preheat oven to 350 degrees. Cook and drain pasta. Brown the sausage and drain the excess grease. In a casserole dish mix pasta, sausage, sauce and cheese. Once mixed, cover entire casserole with more cheese. Bake for 15 min. or until cheese is completely melted. Serve!!!!

I usually like to serve this with some garlic bread too.... for that you can use any bread you like. Just butter the bread, sprinkle with garlic and oregano. Or you can use a pesto spread as well. Just bake for about 8-10 min with the casserole.

This is how we do Easter!!!

Of course we started the weekend out with coloring Easter Eggs and doing the egg hunt and making potato salad.....But this is how we do Easter Day!!!!!

My brother Chad. And then some skeet shootin' too....First up Dad and Ry, then Dad and Dave. Lori and I shot as well and we both even hit some skeets!!!!

Another Anniversary.........


On April 2nd, my parents celebrated their 33rd anniversay......Congratulations Mom and Dad.
We love you so much and I am so happy to have you both in my life. I look at you two and see what Mike and I should strive for in the years to come.....they way you work together, play together and love each other. You two have taught me so much about life and how to live it fully by the example you have set for me and the MANY wisdoms you have taught all of your children. I hope that when I become a parent, I can be like you, for you have shown me the kind of parents that Mike and I want to be!!! We are lucky to have you both to learn from!!

5 year Anniversary!!!

Mike and I have been married for 5 years now.
My how time flys. We dated for 4 years before finally
deciding to get married. I am so thankful for him
and everything that has come with him. I love him and
feel like he is too good for me. I pray that he doesn't figure
